Almost Lasagna

This is a great versatile recipe, easy to make ahead and heat later.  Just add a scrumptous bread and a salad and your dinner is complete, at only $1.50 per serving!

Ingredientscheap meals

1 pound cooked elbow macaroni or pasta
1 pound ground beef, turkey, chicken or sausage
1 jar pasta sauce, (26 ounces)
freshly grated parmesan cheese
2 eggs
1 pound ricotta cheese
2 cups shredded mozzarella cheese
2 cups diced vegetables of your choice; zucchini, carrots, etc.
salt and pepper

Directions

Brown meat and drain well.
While meat is cooking, stir eggs, ricotta cheese, parmesan and salt and pepper together.
Mix cooked meat, macaroni, sauce and vegetables.
Add the ricotta mixture and blend well.
Add cooking spray or olive oil to a 9 x 13 baking dish.
Spread half of macaroni mixture evenly over the bottom.
Top mixture with a cup of mozzarella and sprinkle on grated parmesan cheese.
Add the remaining macaroni mixture and top with layer of the mozzarella and parmesan cheese.
Cover with aluminum foil.
Bake for 20 minutes.
Uncover and bake for another 10 to 20 minutes to lightly brown cheese on top.
