Grab and Go Breakfast Burritos

For a quick grab to go breakfast, make breakfast burritos ahead and freeze.  Then microwave, grab and go!

Ingredients for 12 burritos:

12 flour tortillas
6 eggs, scrambled
6 potatoes, diced and fried (or 1 can of diced potatoes)
Grated cheese of your choice
Cooked, diced bacon or sausage (optional)
Salsa (optional)

Directions:

Scramble eggs, fry potatoes, cook bacon or sausage (if desired).

Soften the tortillas so they will be flexible.

Add cooked ingredients to the tortillas, roll, tucking the ends in first.

Wrap in plastic wrap, then place all the burritos in a gallon freezer bag or freezer container.

To prepare for eating, heat in the microwave a few minutes until warmed through.
