Basted Grilled Vegetables

Your choice of mixed vegetables are prepared with olive oil, lemon, and fresh herbs.

Ingredients:

Grated peel (no white) and juice of one lemon
1/2 C. olive oil
2 Tbs. fresh, chopped thyme, rosemary or oregano
1 clove garlic, pressed
Vegetables of your choice: eggplant, green pepper, squash, etc.

Italian Grilled Onions

These onions are great as a side dish for any main course or layer them on burgers and sandwiches!

Ingredients:

1 lb. purple onions
2 Tbs. olive oil
1 Tbs. balsamic vinegar
1 tsp. fresh rosemary, minced
2 Tbs. fresh parsley, minced
1/2 tsp. oregano
1 tsp. black pepper
1/4 tsp. salt
